Ingredients

For 2 portions

1 cup jasmine rice or basmati rice (180g)

2 cups water or plant milk (480ml)

1 cup coconut milk (full fat) (240ml)

1-2 tsp coconut sugar

1 tsp coconut oil

1 tsp coconut butter (optional)

1 pinch ground vanilla or vanilla extract

Instructions

1.

Put the rice in a pot together with coconut blossom sugar, plantbased milk and coconut milk, bring to boil and then simmer on a very low temperature for about 15 minutes.
Do not stir too often and leave the lid closed!

Remove from heat, add coconut oil and coconut butter.

Now mix the rice in the pot with the blender stick until you get a very smooth paste. If necessary add a little bit more liquid, depending on the desired consistency.

4.

Put the rice pudding into a bowl and top it with fresh fruits, hot cherries, carob “chocolate” sauce, nut butter or whatever you like. Creaminess overload
