Extra creamy rice pudding

Are you looking for a warm, creamy, sweet breakfast? Then I have the right thing for you.
I´ve seen the legendary “Pudding Oats” a lot on Instagram lately and wanted to have something like this for breakfast too. Unfortunately, pudding powder is not the best idea for those of us with histamine intolerance, and for a long time i couldn´t find an alternative I could tolerate. Until one day, by chance, I came up with the idea of simply purifying the rice and it worked out perfectly.The result was a super creamy, sticky rice pudding.
You can actually use any rice you like for this variation. The only rice I haven´t tested is full grain, because it just simply doesn´t taste good to me.

Dairy - free
For 2 portions
1 cup jasmine rice or basmati rice (180g)
2 cups water or plant milk (480ml)
1 cup coconut milk (full fat) (240ml)
1-2 tsp coconut sugar
1 tsp coconut oil
1 tsp coconut butter (optional)
1 pinch ground vanilla or vanilla extract
Put the rice in a pot together with coconut blossom sugar, plantbased milk and coconut milk, bring to boil and then simmer on a very low temperature for about 15 minutes.
Do not stir too often and leave the lid closed!
Remove from heat, add coconut oil and coconut butter.
Now mix the rice in the pot with the blender stick until you get a very smooth paste. If necessary add a little bit more liquid, depending on the desired consistency.
Put the rice pudding into a bowl and top it with fresh fruits, hot cherries, carob “chocolate” sauce, nut butter or whatever you like. Creaminess overload
