Ingredients

For 12 pieces

For the Brownies

1 cup rice flour (120g)

1/2 cup coconut flour (60g)

1/2 cup tapioka starch (60g)

Can be replaced by potato starch or corn starch

2/3 cup coconut sugar (80g)

Or another sweetener of your choice

2/3 cup carob powder (sifted)

Or normal cacao powder

1 1/2 tsp replacement for baking powder

Or normal baking powder

2/3 cup coconut oil (160ml) geschmolzen

3/4 cup coconut milk (180ml)

3/4 water (180ml)

1/2 tsp salt

1 tsp ground vanilla

Or vanilla extract

For the frosting

1/4 cup carob powder (40g)

1/4 cup rice milk (60ml)

2 tsp coconut oil

1 tsp cocnout sugar

Or another sweetener of your choice

1/4 tsp ground vanilla

Or vanilla extract

Instructions

1.

Preheat the oven to 200 degree celcius (400 degree fahrenheit) and prepare a baking sheet. I use a simple baking dish 25×20 cm

Add rice flour, coconut flour, starch, coconut sugar, carob powder, baking powder, vanilla and salt into a large bowl and mix everything well.

If you use cacao powder instead of carob add 1-2 tbsp more sweetener!

Stir in the melted coconut oil, water and coconut milk until a smooth dough is formed, it should not be to liquid. Pour the dough into the baking dish and smooth out with a spoon

Bake the brownies for 25-30 minutes, but not much longer. They should still be beautifully soft inside

Let the finished cake cool down in the baking dish for 30 minutes, then carefully remove it using the baking paper and cut into squares

6.

For the frosting, put all the ingredients in a small saucepan, stir well and slowly boil at medium to low heat until it gets smooth and creamy

Distribute frosting on the brownies and then ….
