Fluffy vegan pancakes with carob sauce (gluten-free)

May I introduce you to the best gluten free vegan pancake recipe that I´ve ever tried? I´m a little bit proud of it and happy to share it with you. I´ve been experimenting with different ingredients and quantities for a long time, but eventually the result was perfect. Most of my recipes are low in histamine, but for this recipe it really depends on your personal level of tolerance. Some people with a histamine intolerance can tolerate buckwheat, others don´t. I personally eat it from time to time without problems. Please try it for yourselves and maybe replace buckwheat with another flour. If you have no intolerances, you can simply enjoy the recipe. I like to use tapioca starch, but you can also use cornstarch or potato starch. The ground flaxseeds can be replaced by chia seeds. Easy Peasy Vegan Pancakes (low histamine)

Pancakes are my absolutely favorite breakfast, especially if I have a bit more time for the preparation. That is why sundays are my declared pancake days! I've tried many recipes for vegan pancakes, but I've never been so happy with them. Mostly they contain bananas, which I can eat only green and unripe because of the histamine intolerance. Maybe you can imagine that this doesn´t tastes very good in the pancake dough and several tests were not crowned with success. Well, at some point I thought to myself: Conny try it just very simple #simplyconny with as little ingredients, and yes yes yes it worked. The advantage is that they are made super fast, so they are also suitable for a "mid week" breakfast. I use spelt flour, which can be replaced with rice flour and oat flour if you want it gluten free. Or you just check out my recipe for super fluffy gluten-free pancakes. I don't tolerate normal baking powder too , so my low histamine replacement is used here. The ground flaxseeds can be easily replaced by chia seeds and the rice milk by any other plantbased milk or water. You see, this recipe is very easy and versatile. Have fun with my trying it out!

Pasta With Vegan Baked Bell Pepper Sauce (low histamine)

Pasta is one of my favorite dishes in the world and I guess I'm not the only one right? Perfect if you don't really have time to cook, super versatile and always delicious. The absolute classic is and remains tomato sauce. Everyone knows it and everyone loves it. But what if you can´t tolerate tomatoes anymore or you have to banish them from your plate because of a histamine intolerance? Well, then you need a good alternative and I would like to introduce one to you here. A super aromatic sauce, as beautiful red as from tomatoes and equally delicious. Also for non-allergic persons an absolute recommendation. The preparation is certainly somewhat more elaborate, but the final result really compensates for everything. The base for the sauce is a puree made of oven-baked red bell peppers. I always prepare it in larger quantities and then keep it in the refrigerator. But the sauce tastes very good with any kind of noodles, also with gluten-free ones! Have fun with the recipe!

Vegan Carob Brownies with chocolaty frosting (gluten-free, low histamine)

Hands up if you love brownies as much as I do! These small, moist, chocolaty pieces make every heart beat faster. Of course, there are already many brownie recipes out there, but I wanted to create a healthy and gluten-free one , which is also low in histamine and can be prepared quickly. Brownies mostly contain a lot of industrial sugar, wheat flour and, in the vegan version, often legumes or nuts. All things which are unfortunately not so well tolerated with a histamine intolerance. It´s the same with cacao or chocolate. But what is a brownie without chocolate? A wonderful alternative to cacao is carob powder, which you can get in every health food store. The taste reminds a bit of cacao but it is not bitter, rather fruity, naturally sweet with a touch of caramel. Thus, when baking, the sugar can be reduced. Carob is the roasted, ground pulp of the carob tree and a real nutrient bomb. It is super well tolerated, contains little fat but a lot of fiber, calcium and iron. These are definitely enough reasons for a GO right?? So just start with this easy recipe. Of course you can replace the carob powder with normal cacao powder, just make sure that you use a bit more sweetener. Have fun with baking!

Low histamine baking powder replacement

Baking powder can actually be a problem with a histamine intolerance. The mixture of cornstarch and baking agents is often not very well tolerated. Sometimes it also contains guar gum to which many people are allergic. Winestone baking powder is often recommended as an alternative but, as the name impies, it is made from wine - very suboptimal. For a long time I couldn´t tell if i could tolerate baking powder, because of all the other ingredients used in pastries. That's why I've looked around for alternatives and found something that is working very well. This mixture of sodium bicarbonate, starch and vitamin C powder in equal parts has the same effect as normal baking powder and can be exchanged in recipes 1:1. You should use 20 g (2 heaping table spoons) for 500g of flour. I usually use tapioca starch because I can tolerate it the best, but of course it`s also possible to use potato starch or corn starch. You can get vitamin C powder very cheap in every pharmacy.
