Vegan Chocolate Chip Cookies

From time to time we´ve got to have something sweet right? How about soft and delicious chocolate chip cookies? Especially on sundays I always feel a strong desire to bake something or to have a cookie or 2 in the afternoon. This recipe consist of only good ingredients, which can be individually and easy modified. Admittedly, it is not low in histamine because of the walnuts and chocolate chips. However, it also works with almonds and carob chocolate, both slightly better tolerated. Just experiment a bit to find what works best for you. Anyone who is suffering from a gluten intolerance can replace the normal oats with gluten-free ones. For all non-allergic persons: simply bake and enjoy :-)!

Baked bell pepper puree – the low histamine alternative to tomato paste

I love tomatoes over everything. When I found out I suffered from a histamine intolerance, not being able to eat them anymore was the worst news. Unfortunately until today it´s the food that I can tolerate least of all besides soybeans. What is life without noodles with tomato sauce and pizza from an Italian restaurant? Well, surely it is something different, but you only need good alternatives to be able to still enjoy your pasta. This aromatic bell pepper puree is the basis for great pasta sauces, pizza topping, chilli and much more. The preparation is certainly somewhat more elaborate than opening a can of sieved tomatoes or a tube tomato paste. But it's definitely worth it, even for non-allergy sufferers. I usually cook the puree in larger quantities and pour it into sterile jars so it stays fresh in the fridge for a long time. This recipe makes about 4 servings of my pasta sauce! Extra creamy rice pudding (vegan, low histamine)

Are you looking for a warm, creamy, sweet breakfast? Then I have the right thing for you. I´ve seen the legendary "Pudding Oats" a lot on Instagram lately and wanted to have something like this for breakfast too. Unfortunately, pudding powder is not the best idea for those of us with histamine intolerance, and for a long time i couldn´t find an alternative I could tolerate. Until one day, by chance, I came up with the idea of ​​simply purifying the rice and it worked out perfectly.The result was a super creamy, sticky rice pudding. You can actually use any rice you like for this variation. The only rice I haven´t tested is full grain, because it just simply doesn´t taste good to me. Maybe you´ve already seen the recipe for my normal coconut rice pudding? It´s a big recommendation from my side too. Have fun with trying the recipe!

Chia Seed Pudding Basic Recipe (gluten-free, low histamine)

Are you looking for a delicious, nutritious and saturating breakfast alternative? Then I have exactly the right thing for you. Chiapudding is the ultimate discovery of the last few years for me, it´s so versatile and on top of that it´s very healthy. I could fill a whole page to list the benefits of chia seeds, but I will limit myself to the most important facts. - Chia seeds have a high content of omega-3 fatty acids and a very favorable ratio of omega-3 to omega 6 - They are true nutrition bombs with high proportions of magnesium, calcium, copper, zinc and iron - Chia seeds contain a lot of soluble fiber and have a positive effect on the blood sugar level - They deliver twice as much protein as other seeds - Chia seeds are gluten-free, anti-inflammatory and are considered natural antihistamine, perfect for allergy sufferers like me. Ok enough for now with the general facts, let´s get straight to business. When it comes to the kitchen, these small black grains are truly all-a-rounders. In the near future, I´ll upload some more chia recipes for you, but today I show you my classic recipe: chiapudding!

Creamy Vegan Chickpea-Zucchini Curry

I’m absolutely addicted to rice, I love it. Rice is to me what chocolate is to most people. Sounds funny, but it´s true. After over ten years on a strict low carb diet, I can´t get enough of this small white grains. And what tastes the best along with rice? Correct, a creamy curry with coconut milk and amazing spices. Together with chickpeas it´s going to be perfect. Maybe you're asking yourself now how I can eat chickpeas with a histamine intolerance. Well, it depends on the amount, and of course on how you histamine levels are in general. After years of of strict elimination diet, I decided to give nutrient-rich plantbased foods a chance again and implement them from time to time, even if they are considered histamine-containing. What can be bad about a food which nature has given us? In the case of chickpeas the advantages definitely outweigh the disadvantages for me. They are a good source for the plantbased histamine-reducing diamines oxidase (DAO) and are rich in folic acid, copper, fiber, iron and zinc. In addition, I incorporated natural antihistamines in the recipe like onion, garlic, turmeric and coriander. You can find a separate blogpost about the topic here! The only thing to be considered with a histamine intolerance is always: do not use the caned chickpeas, always boil them fresh. It takes a bit longer, but is enormously worth in terms of tolerance. If you don´t have a problem with histamine feel free to just use a can for the recipe. What I write here is all based on my own experiences and my personal food list. So please make sure, that you can also tolerate the ingredients, try in small amounts or just replace some things. Have fun with trying the recipe!
