Ingredients

For 16 pieces

1 1/2 cups walnuts (140g)

Can be replaced with almonds

3/4 cup oat flour (80g)

If needed make on your own from gluten free oats

3/4 cup rolled oats (80g)

If needed gluten free

1/8 cup coconut oil (30g) melted

2/3 cup coconut sugar (80g)

Or another sweetener of you choice like Erythrit

1/4 cup rice milk (60ml)

Or another plant milk that you can tolerate like almond milk or oat milk

3/4 cup vegan chocolate chips (80g)

A low in histamine alternative would be carob chocolate

1/4 tsp salt

1/2 tsp ground vanilla

Or vanilla extract

1/2 tsp replacement for baking powder

Or normal baking powder

Preparation time:

40 minutes

Instructions

1.

Pre-heat the oven to 175 degree celsius (350 degree fahrenheit) and prepare a baking sheet with baking paper

2.

Place 1 cup of the walnuts in a blender and blend it into a buttery consistency. It will take some patience

3.

Mix the oatmeal, baking powder and salt in a bowl and set aside

4.

Put walnut, butter, melted coconut oil, rice milk, coconut blossom sugar and vanilla in a separate bowl and whisk it up with an eggbeater. Then add the dry ingredients and stir until you get a smooth dough

5.

Chop the remaining 20g walnuts and stir together with the chocolate chips and the rolled oats under the dough. If you use a chocolate bar just roughly chop it

6.

Use your hands to form 16 balls. Place them on the baking sheet and press them slightly.

7.

Bake in the oven on the middle rack for about 15-20 minutes, until they´re browned on the outside

8.

Allow cookies to cool down on the tray and then convert them to a kitchen rack.
They are still very soft at the beginning, but become firmer after cooling
